HACCP (initials in English), is a preventive program that looks for the high-reaching standards in the elaboration of food. It is based on the application of technical and scientific bases for the production processes. The principles of HACCP are applicable to all the production phases of food, including the production of raw materials, preparation, handling, process, distribution systems and consumption. Why is HACCP used? The HCCP concept covers all the types of potential risks in the production of food (biological, chemical and physical risks) whether they happen naturally in the food, the environment contributes or that they are generated by an error in the process. It is also used to establish prevention systems that can avoid some type of pollutants to settle down. What is required to implement the HACCP? To implement an HACCP plan, it is necessary for the company to adopt the Good Manufacture Practices (BPM, initials in spanish) and the Procedures of Standard Operation.
